Chakli


Chakli is a crunchy snack that we usually prepare during festivals. If you like this and love to cook, we definitely recommend that you buy the Anjali kitchen express. It is easier to make chaklis and comes with a lot of different moulds to make different kinds of shev (bhujia) too.

There are three variations that my mom makes. So here they are:

With different flours

Ingredients:

3 cups jowar flour, 3 cups rice flour, 2 cups besan( gram) flour, 1 cup maida, ¾  cup butter or dalda, ajwana (owa) seeds, white til, turmeric powder, chilli powder, cumin powder, salt and oil.

Process:

  • Mix all the flours and all the ingredients other than butter and oil in a shallow vessel.
  • Heat butter to melt it and pour it in the mixture. (This is the key to get CRUNCHY chaklis)
  • Knead the dough by adding hot water.
  • Heat oil in a kadai and fry the prepared chaklis on low fire.
  • Cool and store in a tightly closed container.

 Tips and Tricks:

The above chakli does not require any preplanning and can be prepared instantaneously because the flours are available at home typically at all times. 

With Bhajani

Ingredients:

4 cups rice, 2 cups gram dal, 1 cup udid dal, ½ cup moong dal , 1 table spoon cumin seeds, 1 table spoon coriander seeds ( all together it amounts to about 1 Kg bhajani)

Process:

  • Roast the dals , cumin and coriander seeds one by one and grind in the flour mill. This is bhajani flour. You can also get bhajani flour in some stores in India or in Indian grocery stores.
  • Take about 4 cups of water in a vessel and keep for boiling.
  • Add 4 table spoons butter, white til (sesame seeds), turmeric powder, chilli powder, ajawana (ajwain) and salt to taste.
  • Take the vessel from the gas and add 4 cups of  bhajani flour, mix using ulathane or long spoon and keep the vessel closed for 1-2  hours.
  • Then knead the  dough and prepare chaklis by using a chakli maker/press. You can make the spiral chaklis on small square paper pieces and fry 4-6 chaklis at a time.
  • Fry in hot oil on low fire.
  • Cool and store in a tightly closed container.

With cooked moong dal and rice flour

Ingredients:

1 cup moong dal, 2 – 3 cups rice flour, ½ cup dalda or butter, ajwana (ajwain) seeds, white til (sesame seeds), turmeric powder, chilli powder, salt and oil.

Process: 

  • Cook moong dal in pressure cooker for 5 minutes after getting maximum pressure.
  • Take rice flour in a shallow vessel.
  • Add ajwana(ajwain) seeds , til, turmeric powder, chilli powder, salt and hot melted dalda or butter to it and mix with a spoon.
  • Transfer the hot cooked moong dal to it and prepare the dough by adding rice flour to get the desired consistency.
  • Prepare chaklis and fry in hot oil on low fire.
  • Cool and store in a tightly closed container. 

Tips And Tricks:

Turmeric powder is optional
